Properly dried ginger (10-12% moisture) stored in sealed packaging has a shelf life of 12-18 months when kept dry and away from direct sunlight.
Organic-certified lots can be sourced from specific cooperatives on request; lead time is longer than conventional stock, so advise your volume early.
