What is the difference between gourmet and extraction grade?

Gourmet Grade A beans are long, supple, high-moisture beans suited to direct culinary use and retail; extraction-grade beans are drier or shorter cuts sold mainly to flavour houses for vanillin extraction.

How are the beans cured?

Beans are hand-cured using the traditional blanch-sweat-dry-condition method over several months to develop their characteristic aroma and dark colour.

Can you supply cut and split beans for extraction?

Yes, cuts and splits are available separately from whole beans at a lower price point, suited to buyers processing for extract or vanillin.
